BRU HANDBUILT ALES & EATS
BRU Brewery in Boulder may be the first brewery we’ve visited that is run by a former chef. Their mantra is “handbuilt ales and eats” and it’s clear when you visit that the emphasis is on both. Located in a strip mall on the eastern side of the city, the place resembles a trendy restaurant, albeit with an emphasis on the beer.
The beer itself clearly has a Belgian influence, although there were a handful of English and American styles as well. They have 14 rotating taps and they note that their beer is never filtered. It’s clear that there is a lot of care put into the beers and we liked them just fine, but were we to live in Boulder we’d probably be coming to BRU for the food.
